Stuffed Avocados with Southwest Rice
Avocados stuffed with a Southwest mix and hearts of palm rice.
Preparation
Heat the Southwest Rice in the microwave for 1 minute.
Scoop out a small portion of the avocado flesh to make more room for the filling (set the scooped-out flesh aside).
In a bowl, mix the Southwest Rice with the scooped avocado flesh, lemon juice, and olive oil. Season with salt and pepper to taste.
Fill the avocado halves with the mixture.
Top with crumbled feta cheese and sprinkle with chopped cilantro.
Serve with sweet potato chips on the side.
Chef's Tip: For an extra touch of flavor and texture, lightly sear the avocados flesh-side down in a hot pan before filling. This enhances their creaminess and gives them a slightly caramelized exterior.
